I added a SB-600 to my D200 kit and I love it. I was able to take it out of the box, put it on the camera and take it to a shoot of a local band, without opening the manual (oh no )..If you are used to Nikon flashes, I think it is pretty intuitive

I have to admit, I really like mine as well. I agonized between the 600 and 800, and decided that the 800 didn't have any additional features I'd be likely to miss. The SB-600 is very reliable, and the results have been very good.

Both are very good, with SB-800 giving you a few extra options, mostly used for off-camera control and better multiple set-ups. I use 600 as well - it does just fine, especially if you group 2 or 3 off camera (for studio work) - it then works really fast - good for shooting models.
